Banana Muffins

You will need:
250g of all-purpose flour
100g of soft butter
2 teaspoons baking soda
4 bananas
125g of brown sugar
2 eggs
1 teaspoon vanilla extract
50g pecans

In a mixer add the sugar and butter then mix together.
Mash the banana with a fork and then add to the mixer
Add the eggs and vanilla
Next mix the flour and baking soda together and add to the mix.

Once the mix is smooth add the pecans (bash them with a rolling pin to break up first) and mix with a spoon (not the machine).

Spoon the mix into well buttered trays and bake for 20 minutes at gas mark 4.


Mine came out a little lop sided as I didn't have the tray flat.

I just baked 12 banana muffins as 4 bananas had gone very ripe and squishy in the fruit bowl. I didn't add nuts as I didn't have any but a drop of vanilla makes them that bit yummier. I just refused to throw them out and would have made bread if I'd had more bananas.

I've also made with overipe pears and pineapple which are amazing. And for picnics cheese and chive with added dried onion go down a treat.

I now have 2 hungry men and a cat waiting for them to cool enough to eat so none for the freezer this time :roll:
