Stay Crusty Bread

So I've made them into rolls as I like them better for lunch but it makes a fine loaf. This stays crusty for about 5 days, then its hard as a rock and could be used as an improvised weapon (or bread crumbs) :lol:

You will need:

650g of strong white flour.
2 teaspoons of yeast.
4 tablespoons of olive oil.
1 teaspoon of salt.
4 teaspoons of honey.
Just under 1 pint of warm water.


First add the flour, yeast and salt to a bowl and mix together with a knife
Add the oil, honey and half the walter and mix with the knife.
Add the last of the water and start to bring the dough together with your hand.
Work the dough in the bowl until it all comes together, leaving a clean bowl.
Knead the dough on a work surface for ten minutes
Put back in the bowl and let it sit for two hours with cling film of top(it will double in size)
Split into two and shape or place into leaf tins if you want a loaf, alternatively make into 10 balls for rolls.
Let it sit uncovered for an hour after shaping.
Bake for 15 minutes (until they sound hollow when tapped) at gas mark 7.
Eat!
