Chef`s Recipes.....

Post by Red Doe »

Watching Jamie Oliver at the moment, and do like his dishes but of course, living here, have a helluva job getting some of the ingredients.
Thing that always annoys me about professional chef`s recipes is when they call for things like lemon or orange rind.
Great addition to a recipe, but, what do you do with the leftover lemon? Nobody surely just uses the rind then chucks it away?
So what do others do with the de-rinded lemon if they follow any of these recipes? Can you wrap it in foil and keep it in the fridge?

not really, but you can buy a cheap dehydrator £50 from Lakeland, then vacuum pack it in bags, then store it in a hard container

It would keep for 24 hours at least, wrapped in cling film/foil in the fridge. So I would probably make up some spicy cous cous and use the lemon juice in that, or a prawn dish.
