3 grated carrots
175g muscavado sugar
175ml sunflower oil
3 large beaten eggs
100g raisins
zest of 1 large orange and the juice
175g self raising flour
1 tsp bicarb soda
1 tsp cinammon
1/2 tsp grated nutmeg
gas mark 4
line and grease a tin
for the frosting
175g icing sugar
2 tablespoons fresh orange juice
mix sugar oil eggs stir in carrots raisinsand orange rind
mix flour bicarb and spices
mix all ingred together
pour into tin and bake for about 45 minutes
take out of the tin and cool
mix icing sugar and orange juice and drizzle over cooled cake.
