I've come across a fantastic wild meat company whilst searching for a boar supplier for one of my yule feasts, and they supply squirrel!
I live near several massive woods, and if things did go south I would hunt squirrel, even though I adore them lol
I've decided to order a couple to experiment with, the recipes I'm toying with at the moment are
1) roasted with a nettle, wild garlic and dandelion leaf dressing (all wild picked as that's what I will be doing) with ginger, dandelion heads, nettle dipping sauce
2) a simple stew with diced canned spuds, veg and with a simple flat bread and wild green salad
3) roasted with a wild blackberry and honey glaze with sautéed canned spuds, and wild green salad
have you folks ever thought about eating squirrel and if so, how would you prepare it?

river cottage did some recipes for squirrel , they basically treated it as lean chicken

Its very lean, low fat so limited food value, you need two per adult really.

I'm not sure I'd roast them - I reckon they'll be too tough and lean for anything other than a long slow cook in a casserole.

Quite right, squirrel is a very lean meat and as such really needs to be cooked 'in something'. Think rabbit! Cook in a sauce or gravy with added veg for a truly delish meal. Otherwise it's quite dry

i was hoping our american members might have a few ideas how to cook squirrel , i know in some areas of the states its a popular bush meat

HFW has a recipe for slow cooking, his son is currently being harassed due to him shooting them to eat!! Will try to post on here for you
