Those egg cupcakes are brilliant, thanks Plantiejo - I especially need *big* recipes like this, because even though I'm only cooking for me, I have a mini-range, and its crazy to just put one item in. So this and some flapjacks, and I'm ready to go.
Last night we had Fish (chunks of Cod, Haddock & Salmon - in fact it was a fish pie mix) with Enchilada sauce and 'riced' cauliflower with Avocado and Coriander. Very filling and very healthy.
