Pan Haggerty

This is a one pan wonder!

Fry up slices of bacon until crispy, then take out of pan retaining cooking juices
Slice up potatoes, carrots and onions
Place layer of pots, then carrots then onion then bacon - repeat
Make a pint of veg stock and pour over, set to simmer, cover with lid or foil and let bubble away for 20 mins or until all veg tender.

If you like, to finish, bung on grated cheese and brown under a hot grill.

Serve straight from pan into bowls and mop up with crusty bread.

Cheap meal and very tasty - obviously omit bacon if veggie and add extra greens!

Quantities depend on your pan size, how many you are serving and how, if like us, you are a greedy family! Play by ear!

Sounds really nice going to try this for Saturday tea :-)

I'm veggie, have been for 30 years ... still miss bacon ...

You can get stuff that *calls* itself veggie bacon - show it to a frying pan, however, and it turns into, um ... you know the rigid plastic that surrounds electronic goods? That! The best that can be done is to roast tatties and quorn chicken pieces together in the oven - a lot of vegetarian *products*, as opposed to vegetarian *food*, are disgusting, sadly!

We make a similar dish with corned beef and beef stock (thin instant or a couple of oxo cubes). We do it in a casserole dish and leave in the oven for about 3 hours though (removing lid toward the end for crispy top). It's a great cheap winter warmer (used to be pennies before corned beef rocketed) and even converted my wife's 'never have, never will' attitude to corned beef.
