Book recomendations

Hi all
For presents I'm looking for some books on techniques to preserve food.
Mostly in need of ones on the subjects of pickling, fermenting and smoking.

Any suggestions?

The best one on Fermenting is Real Food Fermentation by Alex Lewin.

A good all round introduction to preserving is Abundance by Alys Fowler.

The book I refer to frequently is'Home Preservation of Fruit and Vegetables ' by the agricultural institute of food research. It was published by HMSO books , there may be an update, or you may get a used copy.

Hey, I have a little experience in these areas. I can recommend 'Good Home Preserving' by diana peacock for general jams / preserves / pickles etc. A 'bible' of charcuterie is 'Charcuterie - the craft of salting, smoking & curing' by Michael Ruhlman & Brian Polcyn (this is a very highly regarded book). Also 'Curing & Smoking' (River Cottage Handbook No. 13) by Hugh Fearnley-Whittingstall is a good one too, has lots of info on bacteria etc.
