I am looking forward very much,to mushroom - hunting time. We use a lot of mushrooms here, but the wild ones are not easy to store.I enjoy that time of year,and we have a rich diversity of fungi here.
The dehydrator will help to extend the garden harvest and cut waste in the fridge..I have noticed a few carrots and a couple of peppers...

Mushrooms are fabulous, in slices or chopped into pieces!
I remove the stalks from some of them and grind that down into a powder, makes for amazing flavour in soups and stews! also added to any mince based dish that you would add fresh mushrooms to.
I at last have the kale on the machine doing its thing.
It also smells amazing in here at the moment, I have 3 pints of chicken stock ready for canning and this morning after slow cooking all day yesterday and all last night I have 2.5 pints of beef bone broth that I will can up also. The poor mogsplosh sat in front of the oven door watching the beef bones roast and now he doesn't know what to beg for first!

I've got a mix of peppers and leeks on the go at the moment, onions next and I might go crazy and get another pineapple when we get the messages tomorrow, my pal who's half into the idea tried some of my dried pineapple and was very impressed, he's been talking about getting a dehydrator for a while now, I'll keep working on him.

We've got chicken stock dehydrating at the moment. Roughly, a tsp of powder = half a pint of good stock. It smelt glorious when we were making the broth, but almost all of the smell has gone now. Plan to do the same with beef & lamb bones as well

It's weird but once dehydrated and ground to powder, it smells awful! Tastes great but not a nice smell to it. I have a lot dehydrated hence canning some up. Once ground up, it's worth dehydrating the powder for a couple of hours to remove any hint of moisture or it will clump in the jar, make sure its room temperature before storing.

We learned that one the hard way :p We put all the powders back through before storing now, just to be on the safe side!
That's how I learned also Redskies , I had a lump rather than a powder bashed it all up and dried it again and all is well now! It's a lovely colour when in the jar too.

More onions, I do use them a fair bit though and they're cheap. I've invested in some of the decent 'clip' plastic containers, I've been topping up the Kilner jars and while they're 'nice' they're no more practical than tupperware. I've always had the idea that if in the extremely unlikely scenario I have to run to the hills I'd be taking some of my dried veg in a tupperware box to add to stuff along with a few other de-blanders. While living off a tub of peanut butter might tick a few boxes I'd be a hungry and very grumpy boy if that was my only scran.
