The difficulty for me is I am on a tiny budget and have no idea how to prep for my mother who has diabetes for the worst case scenario

Currently I barely have anything but a ton of knowledge in my head, this weekend am going to try and by some low cost essentials though

Hello and welcome to the Forum.
Firstly don't panic, there is still plenty of time.
Ask your mother to order more of her prescription (tell the doc your going on holiday overseas and want a back up)
Poundland do rubber gloves, builders masks and goggles, - not the best but a start.
Store what you eat, eat what you store.
