2oz cocoa powder
6oz plain flour
11/2 tsp baking powder
7oz caster sugar
9oz cooked Beetroot
3 eggs
7fl oz sunflower oil
31/2oz dark chocolate, finely chopped
Icing sugar to dust
Set oven at 160degrees C
sieve the cocoa powder, flour and baking powder into a bowl and add sugar.
Grate the peeled Beetroot and then using a mixer add the eggs and slowly pour in oil. Blend until mixture is smooth.
Stir the wet mixture into the dry ingredients and add the chopped chocolate.
Put into 12 muffin cases and cook for approx 20-30 mins or until a skewer comes out clean.
Dust with icing sugar when cool.
