I do a mix of both, I have the Andrew James sealer.
I have found you need to be careful of manufacturer packaging that may contain air, I buy a lot of Tesco Value biscuits and take them out of the packaging then vacuum pack. The oldest I currently have is 18 months and they are perfectly fine.
I also use it for rice and pasta (double bag to avoid punctures), rice ends up like a solid brick making it great for stacking. Most other things in my BOB are vacuum packed mainly to keep out moisture and reducing size.
I also have that same vacuum sealer and have made up 10 x 'camping-packs' containing food, plastic cutlery (be careful it doesn puncture the plastic !), wet wipes, tea bags etc. My packs are about 2200 calories each, designed for 1-person-day each contained neatly in each pack, just need to add water and a method of cooking. Think they cost me about £6-7 each in total.
Edit: after watching the video I find my packs are very similar to what he made up. I've used a few on camping trips and they are great, though 1 pack must have got punctured in my rucksack because it had lost vacuum when I took it out to use it.

Hi, I mentioned 1000kcals as the amount per pack I'd make - this does not mean I would only have 1000kcals per day . nothing stopping me having 2 or 3 packs depending on situation, energy spent, durration that packs required for i.e. days hike or a weeks roughing it camping.
The 1000kcal size should just make them easier and smaller and as have children - better in my opinion.
Fully appreciate if was walking for miles over rough terrain with heavy pack etc etc then I would need more calories and fluids
The clip was interesting but its nearly all dried food so here's a challenge or everybody. Try and find like for like (or as close as possible) replacements for the British army 24Hr Ration pack.
Main meal I'd suggest one of the 'look what I found' meals as its in a pouch, can be stored a room temperature and doesn't need water. The down side is they're watery and low in calories
