I am trying to find some recipes for cakes/biscuits/puddings that don't require butter or marg. I've had a mooch through books and the Internet but haven't come across anything decent so its over to you.

Please post any recipes you might have or share the alternatives to butter and marg in cake making.

I might have some but generally you'll find them substituting with oil. I have some egg free that might work. Will have a look for you.

Found a sponge cake for you if you can have milk
1/2 cup milk
1 cup plain flour
1 1/2 tsp baking powder
2 tsp of grated lemon zest
1 dinner spoon salt
3 eggs
3/4 cup of sugar
Warm the milk until the sides bubble and set aside turn the oven on @180c
Sift the flour with the baking powder and salt
In a small bowl beat the eggs until thick and lemon in colour. Add the sugar beatting until smooth and well blended.
Fold in the flour until smooth
Add the milk and lemon zest beating until combined pour into undreased 9 inch tin
Bake for about 30 mins or until fork comes out clean leave to cool before eating

Most Paleo Cakes are Dairy Free but as Kalprep says an oil of some sort will be used as a substitute. I use Coconut Oil or Olive oil in all my baking/cooking. The following link might appeal to you if you dip into the related websites...

So for this Heavenly Blueberry Lemon Pound Cake I would:
Not buy Coconut Flour as it is expensive, I blitz coconut flakes in a coffee grinder to make it closer to flour consistency,
I would substitute Honey for Splenda as I do not touch artificial/processed sweeteners with a barge pole,

Most Italian cakes tend to use oil.

To my understanding clarified butter is the preferred fat of paleo, due to it being only the healthy fat, its high smoke point and its lower calorie then Coconut Oil or Olive oil. I've been on Paleo for 6 months now, I read a whole bunch of books on the subject to see what I was getting myself into, lol.
