1 lb lentils soaked overnight
2 cups frozen chopped onions
1 can diced tomatoes
6 cups water
1 bay leaf
1 tsp salt
1 teaspoon cumin
1 large diced potato
cook brown rice seperately soaked overnight
cook in large pan bring to boil and simmer for about 1 and a half hours
serve with the brown rice
makes about 10 large cup servings
can be frozen as individual dinners
