Sliced potatoes are a favourite here too. They rehydrate fantastically well. The best way I have found to do sweet potato is this.

You can cook, mash and dehydrate, then powder the usual potatoes too, makes an instant mash powder, and is also good for thickening stews, which is what I usually do with it :)

Sounds good! How much powder/water does it take to make up a decent serving? I'm assuming that you don't add milk or butter to the mash before dehydrating due to fats?

I do add instant mash to stews for thickening, it adds a nice bit of flavour.

No, just plain tatties in the dehydrator. I've not bothered to reconstitute them on their own, just heave em in stew usually.

Got bananas on the go at the moment. Tatties sound intriguing though and I've got some more jars to fill.

Bananas are delicious! Did you dip in anything before putting them on the trays? I found lemon juice good to stop them going black.

The potatoes are impressive, I will certainly be doing more of them, cubed and shredded as well as slices and mashed.

The banana's were left to soak for about 10-15 minutes in lemony water, they're about 3/4's done and look ok still. I'm away up the hills this weekend so I'll take a mixed bag of banana and pineapple chunks up in a pocket to munch. I've got a wee box of dehydrated veg (and herbs/spices) that I can add to cooked meals, including chilli and garlic of course. :D

I've bookmarked that page from Redskies (thanks) and I'll have a look at that too.

Handy hint; if you are doing strawberries, don't taste em once they're dried. Don't do it!







(We pretty much had to sit on youngest when we did strawberry powder last week. She was snarfing them down at a rate of knots astonishing for one so young!)
