OK, loads of question asked

First of all:
Taylor94, Welcome to the journey.
Theres several different 'depths' to food storage, ranging from ultra short term (Not having to go shopping every other day) all to way up to Long Term Stores (Dried Pulses and Grains, for example, sealed in mylar and buckets and good for maybe 30 years)
You're trying to run a marathon before you can walk, slow down and don't panic.

First of all you need to decide how much space and money you can afford to dedicate to food, and I mean afford comfortably.

Then you want to decide how long you're planning on storing for (And that depends on what you're insuring against, you don't need a decades worth of rice & beans if you're not bunkering up for a nucler war for example)

Next you need to find out how much you'll need to store, keep a 'Food Diary' for a week or two and fill in everything you use over that time* (round up, if you use a whole jar of jam and open a second one count that as two)

While you're doing all this, read the links posted (and anything else that takes your fancy)

And remember the most important rule:
You don't eat an elephant in one go, you cut it into bits and eat a little at a time.

* Don't forget toilet roll, I know its not food but without it life sucks
