Meanwhile, I just converted a joint of lamb into a HUGE batch of ready to eat casseroles in the freezer.

I'm torn between the smaller freezer space just needed for the meat, compared to the convenience of a full freezer tray of ready to eat balanced meals:-
Freezing just the meat: Less freezer volume used (but irregular shape) : Leaves recipe options open: Useless with protracted energy outage: Needs separate veg resources.

Freezing the meals: More freezer volume ( but trays stack tightly): Ready to eat: Already includes veg.

On balance, I tend towards 75% freezer volume of just meat and cheese with 25% volume dedicated to ready to eat meals.

What's you opinions on freezer use best practice for preppers ???

Any thoughts on the possibility of me storing my home made casseroles in mason jars at ambient temperatures? Longevity of storing in jars?

I'm interested in hearing what other preppers say here, I'm never sure what's the best way to store meat, we use a lot of lamb and I bought a load of stackable freezer trays but never used them yet. Mainly because I'm too lazy to do the cooking. :twisted:

Bottling,or canning as the yanks call it,is a very specialised method of preserving food. Meat especially.If you do the research,get the pressure canner and the rest of the equipment ,then its doable. For ( me) the risk of botulism if anything goes even slightly awry,is too great.But it can ,and is done by many folks.

Freezing is by far and away the simplest way to preserve meat.Make sure its in strong plastic,so as to prevent freezer burn.Squeeze the air out of the bag first ( you don't need a vaccum packer) tie it off, label it,freeze it.Simple.

Felt as if I should cook it first then stack in trays but am too lazy to do it. So it'll be bunged in polybags and chucked into the freezer :mrgreen: Big order coming tonight.
