Red Thai Curry

Ingredients;

1 tbsp oil
2 sliced onions
2 tbsp red curry paste
Can of coconut milk
400g can of red salmon
200 ml veg or fish stock
Juice of one lime ( or bottled equivalent)
200g can of drained peas
200g can of drained green beans
Coriander leaves
Noodles or rice to serve with it

Heat the oil, cook the onion for 5 minutes then add the curry paste and cook a further minute or so. Stir in the coconut milk, then add the stock gently. Simmer awhile. Then add the lime juice and salmon and cook for a few minutes. Then add the peas beans and coriander. Serve with your noodles or rice.

I love this personally. It is bang on.
