We seem to have got the idea of dehydrating veg. but fruit seems more difficult.

We do the fruit the same way as the veg. but the results don't seem as good. The rehydrated fruit doesn't 'bounce back' in the same way as the vegetables do.

Anyone else have this problem?

I never really bother re-hydrating fruit, just chomp on it.
Rehydrated some apple and pineapple but just as an experiment. Texture doesnt really seem to recover.

Remember for non-citric fruits like apple or banana, soak in lemon juice before drying. We don't blanche fruit so need to do that to stop it going brown.

Thanks jennyjj01. Confirms what I found when rehydrating fruit.

We'll stick to veg. which we have finally got the hang of.
