I never really bother re-hydrating fruit, just chomp on it. Rehydrated some apple and pineapple but just as an experiment. Texture doesnt really seem to recover. Remember for non-citric fruits like apple or banana, soak in lemon juice before drying. We don't blanche fruit so need to do that to stop ...
