Corned Beef Potato Pie

Corned Beef Potato Pie

Potatoes, peeled, chopped, cooked and mashed (or instant mash)
Tin of carrots, chopped up if whole or sliced
Tin of peas
Tin of Corned Beef (x1 standard size tin per 2), mashed
Gravy made to your preference
Other tinned veg to make larger portions and bulk out if you wish

Layer veg in oven proof dish
Add gravy to corned beef until you get your preferred consistency (you can add veg to this instead of layering it - I do it this way as it looks pretty when served!!), season to taste if you wish
Pop the potato on top and spread out

Bake in hot oven for 20-30 minutes until piping hot all the way through

Ideal dish to portion up, freeze and then have as a stand-by lunch/dinner

My grandad used to make something similar to this, very nice my idea of the perfect comfort food, definitely fills you up and very nice after a day of hard work.

I'm not a huge fan of corned beef, but may give this a shot as once a week I've told the mrs we're doing a canned food / stash food only evening meal! (and some simple "viking bread"). Thanks for the idea
