Ciabatta (Italian bread)

Ciabatta is a very tasty Italian bread and makes a great sandwich bread or sliced its the ideal bread for making bruschetta.

First thing to do is make the starter dough, you will need to do that 12 to 16 hours before you attend to start baking.
Mix 125g of strong white flour with a teaspoon of yeast and 75ml of warm water. Cover the bowl with clingfilm and place in the fridge for 12 to 16 hours.

To make the bread.
500g Strong white flour
The starter dough you made the night before.
1 teaspoon of table salt
10g of yeast
400ml of warm walter
5 tablespoons of olive oil.

Mix everything together except the starter dough, once all the other ingredients are combined add the starter dough and knead with well floured hands. The dough is a wet dough so you might want to use a machine with a bread hook.

Oil a bowl and place the dough in it and leave aside for an hour and a half to double.
Split the dough in two or four (depends how big you like) and make them into a rectangle shape, and leave for another hour and a half.
Preheat the oven to gas mark 7.
Bake the bread for 15 to 20 minutes.
