Just make a comparison between the calories in a tin of beans and a small tin of ham - I know vegans who really struggle with energy levels. They're forced to eat buckets of peanut butter. Living in TEOTWAWKI without eating animals.....well.....good luck, but I'm highly skeptical.
Each to their own mate but you can mix it up, meat one day, beans another but I'm not sure comparing vegan lifestyles to apre apocalypse cuisine is a fair comparison. If you want to eat lots of meat then store lots of meat but one size maybe doesn't fit all. I'm married to a veggie (who thankfully now eats fish) so maybe a bit more rubber about veggie scran. Don't get me wrong, she's happy to do meat dishes for me, she's not militant about it but I'm happy to not eat meat at every opportunity, there's some pretty good non meat options without having to resort to nut roasts.

I think we're all agreeing on this matter, pretty much.

Really ,its a classic case of store what you eat,and eat what you store. If you don't like beans ,don't bother

As you said earlier, you are new to this prepping lark. Many preppers store beans( especially the Americans) for all the reasons previously stated on this thread. However, like many things in prepping, never feel you should be doing this or storing that, just because others do. :D

This.... I loath peanut butter (its a texture thing as I'll happily munch on salted peanuts) and even though its often listed as an essential prep I see no reason to store it.

Deeps: I too live with a Pescetarian, we also have meatless days and sometimes I'm not sure if 'today' is meatless or not.
