Either slice as you would potatoes or chop into dice no bigger 1cm, either way don't forget to blanch. I like both as you can rehydrate the slices and fry in butter or use the dice in a stew or make mash.

I do them the same as carrots - blanch, slice and dehydrate. They don't go as small as slices of carrots do when dried. A handful of both and a handful of dried spuds and some dried onions with a tin of stewing steak...add boiling water and cook for about 40 mins until the dried stuff has hydrated. 192g (20 sprouts) down to 34g
2 lots bagged up, will re-assess in the morning.
Looks like another lightweight camping food found.

Currently have a couple portions of chilli dehydrating, to be vac sealed and stuck away for the next exped, I've made a wee dent in my stash of home made walking meals. Been a bit quiet on the dehydrating front for a while, I'll get some more onions done, got a load I've had for a while.

I finally have enough space in my brain to start thinking about dehydrating again. 8 bananas bought as an experiment, I have some of that bottled lemon juice concentrate in the fridge. I'll be going for it tomorrow.
So, the jars I'll keep them in, they can go through the dishwasher, and the lids can get boiled. What about the trays of the dehydrator? Do they need cleaning in a particular way? As in, boiling water not just hot water? And people keep writing about banana *chips* - most other things seem to get powdered, more or less, and I like the space saving and oxygen-depriving sense of doing that. Why not banana, or is that just a choice?

I would wash trays in hot water with a drop of thin bleach in.Rinse.Dry.Then run the dehydrator on 70° for 20 mins before putting the nanas in.

Currently got a packet of frozen mixed veg on, giving it a go, although there was a bit of an 'iffy' smell which has worried me. I'll see when they're done.
