recipes that work and help stretch the budget and resources

heres one from me and just tested on the family (3 adults 2 kids), and was under £5 to make and will easily do two meals

chunky pea and ham thick soup

6 tins of mushy peas (4p per tin from aldi on offer)
2 packs of "cooking bacon" mostly smoked end bits look for the lumpy packs (89p per pack from asda)
few carrots cut into small chunks about the size of a 20p (quarter of a pack used 87p from aldi)
charlotte or salad potatoes again cut into small chunks,hold their shape and texture when boiled (90p from aldi)
about a pint of boiled water and an oxo cube
worcester sauce and pepper to taste

chop up the bacon bits into small pieces and cook over a low heat till cooked through and sweated out
empty the tins of peas into a large pan
add the pint of stock and the cooked bacon bits bring up to simmering while stirring so that the peas dont stick to the bottom of the pan
add in the carrots and potatoes and then leave on a slow simmer till the carrots and potatoes are cooked but firm and turn off
you can leave the "soup" to self cook for a while as the thickness of the soup mean it hold its temp for a long time.

if you need to thin the "soup" add more boiled water to your preferance
i served mine with fresh bread battons from the supermarket that had just been reduced
overall a very substantial meal that was cheap as can be and still highly nutritious

and as its a one pot one burner meal it should be easy enough to make on any heatsource and in any situation

If you keep chickens and have an older one that stops laying, one of the best ways to use its meat is roasting it off and using it in soups and such as its not really a good eating bird at that age.

Very cheap meal

Take some shredded chicken and put in a pan with a little blended sesame oil (its very cheap from chinese food markets, and not bad from Tesco's)

Add two crushed garlic cloves and a thumb nail size piece of ginger (you can get away with powder, although both can be grown at home)

Add two finely chopped birds eye chillies (easy to grow too, use something less hot if you don't like heat)

Add a pint and a half of chicken stock (home made or from cube)

Add a whole packet of medium egg noodles (Tesco's own were 50p last Friday)

Cook for 4 minites until the blocks of noodles start to soffen

Add a whole bag of spinach (it can take two bags if you like spinach)

Cook for another 6 to 7 minutes or until the noodles are cooked.

Using about two chicken breasts worth of chicken will produce enough food for four people to eat very well, it also microwaves well, although the noodles will suck up nearly all the broth.
