One for Arzosah really as she likes mushrooms and chestnuts!
Again, I usually use fresh mushrooms (about 1lb – shiitake, chestnut etc) and 2 onions instead of tinned. For assorted tinned mushrooms, try Chinese supermarkets – get all different types including straw, chestnut, oyster etc.
Couple of boxes of chestnuts (about 10oz)
2-3 cans assorted mushrooms *
1 tin fried onions
½ tsp garlic powder
1 tbsp tomato puree
1 tbsp soy sauce
½ pt veg stock
½ pt red wine
½ can chopped toms
2 tbsp flour
1 bay leaf
If I was using fresh ingredients, I would slice the 2 onions and 2 cloves crushed garlic and cook them in olive oil for 10 mins then add the mushrooms. If using tinned, put the onions, garlic powder and mushrooms in a pan and warm through.
Add the chestnuts and the flour and cook for another couple of minutes before adding the remaining ingredients.
STOVE TOP: cook for 45 mins
OVEN: cook at 180°C for about an hour
HAY BOX COOKER: cook for about 3-4 hours
DUTCH OVEN: as for stove top

Re: Mushroom Chestnut & Red Wine Casserole
That sounds about right! Especially with mushrooms and chestnuts just coming into season. Thanks.
