TVP. Mushroom & Chestnut casserole

Another one-pot SHTF recipe I knocked up at the weekend. To be honest, I did use a fresh onion and fresh mushrooms but I have written the recipe for canned goods. You can also swap the TVP Chunks for meat – just make sure you cook it longer.

2 cups TVP chunks
4 cups boiling water or stock
1 tspn Worcestershire sauce
1 tbsp wholegrain mustard
1 tbsp tomato puree
1 tbsp soy sauce
½ can fried onions
2 cans button mushrooms
1 box or can chestnuts
1 tin chopped tomatoes
½ pint veg stock

Put the TVP chunks in a casserole dish (or Dutch oven) with the boiling water/stock. Leave to allow the chunks to rehydrate.

Mix together the Worcestershire sauce, mustard, puree and soy sauce (to save on washing up, you can push the TVP chunks to one side and mix in the casserole dish). Once the TVP chunks are ready, add this mix to the chunks and allow to marinate for ½ - 1 hour.

Add the rest of the ingredients.

STOVE TOP: heat up and allow to simmer for 45mins

OVEN: heat to 150°C and pop in for 75-90 mins

HAY COOKER: heat up the casserole till boiling and pop in the hay cooker. Estimate it would take about 8-10 hours
DUTCH OVEN: light and cook as for stove top.

For the onion and mushrooms you can used dried. I bought myself a food dryer about a month ago and im very impressed so far. Mushrooms and onions both seem to work well when dried, the taste actually seems to improve - it is really intensified and I'd expect them to last maybe 6 months or so sealed in a jar (hard to tell they taste so good im using them as fast as im drying them atm :lol: )

Absolutely Moony! although drying onions does make the house smell!!!

Know what you mean as well about intensity of flavour. Have you tried drying apples yet? I dry them until they are crisp and eat them as crisps - don't last very long around here! :oops:

Maddie ,I love my grub. As a butcher, I eat a fair bit of meat. However, I would be grateful to know where I could buy TVP. I know Asians use this a lot-and Jan cooks a LOT of Asian food!

Yes i have tried dried apples Maddie, unfortunately its my only failure so far. I obviously didnt leave them for long enough, because although they were ok when i took them out, a few weeks later i noticed a bit of mold forming at the bottom of the jar (I store dried stuff in Kilner jars atm until i need them for jam). Has success with onions, spring onions (some on the go right now), mushrooms, bananas, chillis, peppers..hmm think thats all so far not had it very long.
