As you may know, I have sprained my ankle so shopping isn’t easy. I am therefore eating out of my cupboards at the moment which is a brilliant test to see how I would cope ITSHTF, whether I can cook nutritious tasty meals.
INGREDIENTS:
1 tin tinned potatoes
1 tin mixed veg
1 tin sweetcorn
4-5 sun dried tomatoes, chopped
1 pack Express Rice
1 tin frankfurters
1 bottle salad cream
Couple of pinches of stock powder
Chop up the frankfurters and potatoes. Add the remaining tinned ingredients and the stock powder. Mix with enough salad cream to taste.
ALTERNATIVES
• I am actually veggie so cooked up some Quorn sausages rather than using frankfurters
• As an alternative to frankfurters, chick peas would be a good source of protein
• Mix and match your veg as you wish
• Try using mayo although it doesn’t have quite the same “punch” as salad cream
• Try adding some fresh garlic or ½ tspn garlic powder
