Frying Pan Bread (gluten free gram flour version):
INGREDIENTS
Water
Olive Oil
2 cups Gram Flour (which, incidentally, is naturally gluten free)
1/4 teaspoon Xanthan Gum (which is the gluten substitute)
2 teaspoons of a gluten free baking powder (OR 1 Teaspoon of Cream of Tartar and 1/2 Teaspoon of Bicarbonate of Soda if you cant find a gluten free baking powder)
METHOD
Mix the dry ingredients thoroughly, add water bit by bit whilst stirring to get a fluffy batter. not quite a runny batter, more of a wet dough.
Heat a nonstick / Teflon frying pan on a high heat, add a splash of olive oil and heat to smoke point, then pour the oil into a cup to be used again.
Pour on the thick mixture and watch as it rises a little. leave it until it seems like its drying on top, then flip it, keeping the frying pan on high. Lave it again for an equivalent time, turn the heat down to about 1/4 and allow the inside to cook for 2 - 3 minutes, then flip for another 2 - 3 min.
Serve with butter, margarine or coconut oil or any other crud you wanna spread on top.
Makes 4 fryingpan breads, similar to a pancake but fatter and nicer.
Gram flour being chickpea based has some natural binding properties and in some recipes it is used like an egg substitute.

Dovesfarm (dot co dot uk) does it. You can buy direct from them online and get all your gluten free flours aswell from them. BUT these days (damn sight better then 8 months ago!!) you can get buckwheat flour at some health food shops (not H+B which is a bugg@r) and xanthan gum in the wierdo foods section of Tesco.tommylongstocking wrote:This is next on my list to try.

I have heard of Gluten intolerance in certain individuals but, in general, is gluten bad for you?
A vegetarian mate makes a dough with strong flour and water, kneads it like bread to free the gluten and then washes the starch from the dough by continuing to knead under water, changing the water regularly until it runs clear. He then cuts the resulting sticky stuff up and fries it for a passable meat substitute. I have tried it and it is not too bad and provides a vegetable based protein.

I am no medical expert so I can't advise if gluten is bad for one and how one would quantify and qualify "bad" I don't know.
For me, if I eat gluten its like razors are cutting me open from the inside. Agony!
I read "somewhere" hat the gluten in bread flour has been hybridized into the grain and its an abnormally high quantity and that can make our bodies develop a sensitivity to it.
That might just be hot air though.
