If anyone has a pear tree and stuck for ideas....this is a very good jam. The recipe is sort of on the cottage smallholder website, but it was apparently 'mis -remembered' and in my opinion there's a mistake in it. So this is what I did:
2 kg pears - peeled, cored , chopped
3 lemons - zest and juice
1 kg granulated sugar
Simmer the pears in the lemon juice until just tender
Stir in the sugar until dissolved.
Rolling boil to setting point - took me about 15 mins for this small quantity.
Pour into sterilised jars as per usual for jam.
The website says to add a litre (yep a litre!! of water) - all the comments after say it wont set unless it's boiled for hours. I don't believe water is required or only a small amount if you think it looks dry(perhaps if the lemons aren't juicy). It's a lovely lemony jam with little 'hits' of pear.

I'd like to stress again that I put no water in this jam....I'll check next time how much actual lemon juice I had, but if it's watery then you're only boiling off the water which seems a waste of time and energy.
