Hello I am new to this and am looking at ways to store Cheese, there is plenty of talk about waxed cheese and how to wax your own cheese.

But why? is there something wrong with supermarket waxed cheese? is the wax for show and not suitable for old methods of storage? I dont know

Can anyone throw some light on this?

Cheers
Jeff

The wax (like the thick rind on some cheeses) acts as a protective layer to slow drying and helps to keep nasties from spoiling the cheese.

Some supermarket waxed cheeses aren't designed for long term storage (in fact, if you believe the BBE dates some supermarket cheeses have spoilt before they become edible )
