odd coloured dehydrated carrots

I have just thrown away a jar of dehydrated carrots from about a year or so ago. They were now the colour of parsnips (ish) They weren't as hard and crisp as other batches so I figured maybe I hadn't dried them enough. In fairness, I normally use them with in 6 months in a stew or something so I have never had them kicking about for over a year before. Is it normal for them to change colour gradually from vivid orange to a dull parsnip colour?Thoughts anyone? Not properly dehydrated maybe? Either way, I chucked them into the compost, just in case, rather than eat them so not totally wasted.

I keep mine darkened and they stay 'carrot coloured'. I've got some in a Kilner jar that are 3 or 4 years old. I do dry the crap out of them though, I don't know if that makes any difference. I've not looked in the jar for a few months either, I'll have a look tomorrow and let you know.
