I've made my own sausages, it probably took a whole afternoon to get it done. But then that included taking the meat from joints of my own pork, mincing them myself and then making the sausages. If you were just buying mince it wouldn't take so long.
I used the intestine from the pig and they turned out great. I have a sausage filling machine which was pretty awkward to use, I'd be interested to know how easy it is to make them with the kenwood.

I think it's well worth the effort.

I used natural casings and minced the meat myself as you can control the quality and fat content better than using bought mince.
I flavoured one batch with Wild Garlic, a bit chefy, but god they were good!

If anyone does decide to have a go at home, then use the natural casings as Bramble and Clarebelle have. They are more forgiving than Devro collagen cases.

Ta Jansman :mrgreen: I don't mind foreign food, I love real French food, but it's the pretentious silly way some of these chefs go on. All so "special". It just does my head in.
