Today I am pickling eggs

I am pleased to say that the fowls are laying like good 'uns. Youngest has fallen out with eggs for the time being :lol: and Mrs.J rarely eats them because of her IBS.So,when we reach this point I pickle them...and I love 'em!

I have tried many ways,but this is now my favourite as our is shelf stable.I dont use thyme,I like a little dry chilli.

I have never been a fan of pickled eggs, my Dad loved them though.I do miss my chickens! Not only were they great providers, but fantastic waste disposal units and more entertaining than any telly programme.

I used the Sarsons Pickled Onion recipe the other day, I swapped out a tablespoon of white sugar for brown and they look very attractive in the jar. :)

I am doing onions too,same recipe.I'll swap the sugar and give it a go.Pickled eggs ARE a bit like Marmite BTW! :lol:

*shudder* I am totally on board with picked onions, the stronger the better, but pickled eggs?! :shock:

I know what you mean :D I used a spoonful of soft brown sugar just to add a bit of colour to the white pickling vinegar. It gives a lovely golden colour to the jar, seeing as you can't get the light pickling brown vinegar anymore. :roll:

I get some wallys (gherkins) in for Xmas, quite partial to an onion and a egg also,
Im just hoping for the best and preparing for the worse.
