What are you preserving?

From the outset,any discussion of DEHYDRATING,please put it in the above What Are You Dehydrating thread.Its great,I've learned a lot and long may it continue...

Today I froze down a batch of French beans ( Blue Lake),more rhubarb( ready for the chutney) pickled some onions ( I pack em tight in the bed and pull em early to beat the white rot)and snagged a pound of blackberries from next doors jungle.I like a few with ice cream now and again,Mrs J like Blackberry vinegar,and I like it fermented with elderberries. :lol:

I've frozen broad beans, peas and some raspberries to make jam later. Made a few pots of rhubarb and ginger jam and now I'm all
Looking forward to canning and pickling what's growing ATM.

I am going to salt some runner beans soon. I always do a few ( mrs J ain't fond as she says the salt ain't good for my blood pressure- nor is work!) Then its plums. Don't like jam so it will be chutney.

Came home yesterday to a counterful of jams , black , red and white currant.

Just got home with a bagful of beetroot :) tomorrow I'll be pickling some and making chutney from others. Yum! :D

I'll toss in some of the wild cherries I've been picking, we've now got a load of cherry jam. While I'm normally a raspberry jam kind of a cove, I'll have to broaden my horizons.

I'm looking at 5 jars of pickled beetroot and 6 jars of beetroot chutney, oh and I snuck a few peppers in the dehydrator too. :D I feel very chuffed. I'm a simple soul, easily pleased. :mrgreen:

More Blue lake beans today.Some for dinner, the rest for freezing.Marrows are coming in thick and fast too.I 'cure them in the sun,then hang each one in a rabbit purse net from the the rafters of the workshop.They last 'til about Christmas.We love 'em.The rest of the harvest will be for drying.That's for the other thread! :lol:
