If you look on "Greenshifters" there are plenty of smallholdings for sale or rent so you can get an idea of what's out there. (In Europe aswell as Britain). If the likelihood is of being stuck there for some time, I would add your favourite condiments! Hospital food can be very boring (rice pudding on the menu 365 days of the year!) and although you probably wouldn't be bothered about such things initially, the lack of variety soon palls.

Rather than stockpiling nappies, get reusables. I'm still using some of the terry squares my children used (they're well grown up now) as cat towels. I think they are a brilliant resource as you can use them for so many other things than the intended ones. OH keeps a couple in the car as they are go...
